Price of Safety FOR several reasons, the food industry is attracting increasing attention, by industry analysts' by concerned government agencies and planners as well as by food scientists. Not least important among these reasons are the emergence of a market for processed foods, the industry' s base in the farm sector where there has occurred and is gathering pace change in cropping patterns prompted by the new economic regime and its potential for export growth on the one hand and for creating employment, mostly low-skilled, in the rural areas on the other It is not surprising then that there is some pressure for better monitoring of the products of the industry. At the same time, there is concern that the sector is under-legislated.
