A State-Level Analysis of Food Demand J V Meenakshi Food demand in India has been characterised by changing preferences. An analysis of state-level demand based on the linear expenditure system suggests that consumers are switching away from cereals toward the more expensive milk, poultry and meat products. This is consistent with dietary changes associated with economic growth the world over.
